Ingredients

- 1/4 cup chia seeds
- 1 cup oat milk
- Zest of 1 lemon
- 2 tablespoons maple syrup
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 1 cup raw cashews (soaked)
- 1/2 cup oat milk
- 2 tablespoons maple syrup
- 2 tablespoons lemon juice
- 1/4 teaspoon turmeric
- 1/2 teaspoon lemon extract
Instructions
- Combine chia pudding layer ingredients in a bowl: chia seeds, oat milk, lemon zest, maple syrup, vanilla extract, and sea salt. Whisk for about a minute.
- Cover and refrigerate for at least 3 hours (or overnight).
- Blend lemon cream layer ingredients until smooth.
- Distribute chia pudding into jars and top with lemon cream.
- Chill for another 3 hours before serving.
- Add fresh fruit if desired, and enjoy!
Notes
For serving, top with fresh berries or granola. Best enjoyed chilled and can be stored in the fridge for up to 5 days.
