Ingredients

  • 1/4 cup chia seeds
  • 1 cup oat milk
  • Zest of 1 lemon
  • 2 tablespoons maple syrup
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1 cup raw cashews (soaked)
  • 1/2 cup oat milk
  • 2 tablespoons maple syrup
  • 2 tablespoons lemon juice
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon lemon extract

Instructions

  1. Combine chia pudding layer ingredients in a bowl: chia seeds, oat milk, lemon zest, maple syrup, vanilla extract, and sea salt. Whisk for about a minute.
  2. Cover and refrigerate for at least 3 hours (or overnight).
  3. Blend lemon cream layer ingredients until smooth.
  4. Distribute chia pudding into jars and top with lemon cream.
  5. Chill for another 3 hours before serving.
  6. Add fresh fruit if desired, and enjoy!

Notes

For serving, top with fresh berries or granola. Best enjoyed chilled and can be stored in the fridge for up to 5 days.
