- 1 1/2 cups almond flour
- 1/2 cup butter, softened
- 1/3 cup powdered erythritol (plus more for coating)
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1/2 cup chopped pecans or walnuts
Instructions
- Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat the softened butter with erythritol until light and fluffy.
- Add in the vanilla extract and mix until combined.
- Gradually stir in the almond flour, salt, and chopped nuts to form a dough.
- Scoop out small portions of dough and roll into balls, placing them on the prepared baking sheet.
- Bake for 15 to 18 minutes, or until the bottoms are lightly golden.
- Let them cool for about 10 minutes before rolling in additional powdered erythritol.
- Allow them to cool completely on a wire rack before serving or storing.
Notes
These cookies can be stored in an airtight container at room temperature for about a week, or frozen for up to three months.
