Ingredients

  • 1/2 cup butter, softened
  • 1/3 cup powdered erythritol (plus more for coating)
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the softened butter with erythritol until light and fluffy.
  3. Add in the vanilla extract and mix until combined.
  4. Gradually stir in the almond flour, salt, and chopped nuts to form a dough.
  5. Scoop out small portions of dough and roll into balls, placing them on the prepared baking sheet.
  6. Bake for 15 to 18 minutes, or until the bottoms are lightly golden.
  7. Let them cool for about 10 minutes before rolling in additional powdered erythritol.
  8. Allow them to cool completely on a wire rack before serving or storing.
