A creamy, rich casserole featuring tender chicken breasts, sautéed mushrooms, and garlic, all in a cheesy sauce, perfect for a keto diet.


Ingredients

  • 2 chicken breasts
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup cheese (mozzarella or cheddar)
  • 2 tbsp olive oil
  • salt to taste
  • pepper to taste
  • fresh herbs (thyme or parsley) for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add sliced mushrooms and garlic, and sauté until mushrooms are tender.
  3. In a baking dish, place the chicken breasts and season with salt and pepper.
  4. Pour the creamy garlic sauce (made with heavy cream, cheese, and herbs) over the chicken.
  5. Add the sautéed mushrooms on top.
  6. Bake for 25-30 minutes or until chicken is cooked through.
  7. Serve hot, garnished with fresh herbs.

Notes

For added creaminess, consider mixing in additional cheese. Allow to rest before serving for best flavor.
