Ingredients

- 2 cups cooked chicken, shredded (rotisserie chicken works great!)
- 8 oz mushrooms, sliced (cremini or button mushrooms)
- 1 cup heavy cream (or low-carb milk substitute)
- 3 cloves garlic, minced
- 1 cup shredded cheese (mozzarella or cheddar)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat.
- Add sliced mushrooms and minced garlic, and sauté until the mushrooms are tender.
- In a mixing bowl, combine cooked shredded chicken, sautéed mushrooms, heavy cream, and half of the shredded cheese. Season with salt and pepper.
- Transfer the mixture to a greased casserole dish and top with the remaining cheese.
- Bake for 25–30 minutes, or until bubbly and golden on top.
- Garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze in a freezer-safe container for up to three months.
