A comforting savory casserole made with tender chicken, earthy mushrooms, and a creamy garlic sauce, perfect for busy weeknights.


Ingredients

  • 2 cups cooked chicken, shredded (rotisserie chicken works great!)
  • 8 oz mushrooms, sliced (cremini or button mushrooms)
  • 1 cup heavy cream (or low-carb milk substitute)
  • 3 cloves garlic, minced
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add sliced mushrooms and minced garlic, and sauté until the mushrooms are tender.
  4. In a mixing bowl, combine cooked shredded chicken, sautéed mushrooms, heavy cream, and half of the shredded cheese. Season with salt and pepper.
  5. Transfer the mixture to a greased casserole dish and top with the remaining cheese.
  6. Bake for 25–30 minutes, or until bubbly and golden on top.
  7. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. For longer storage, freeze in a freezer-safe container for up to three months.
