- 4 oz cream cheese, softened
- 1/2 cup granulated erythritol (or your favorite sugar substitute)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup almond flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Optional: 1/2 cup sugar-free chocolate chips or nuts
Instructions
- In a mixing bowl, beat together the softened cream cheese and erythritol until smooth and creamy.
- Incorporate the egg and vanilla extract into the mixture, blending until fully combined.
- In a separate bowl, whisk together the almond flour, baking powder, and salt. Gradually add this to the wet ingredients, mixing until a soft dough forms.
- If using chocolate chips or nuts, fold them into the dough now.
- Using a spoon or cookie scoop, portion out the dough onto a lined baking sheet, spacing them apart.
- Preheat your oven to 350°F (175°C) and bake for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Store in an airtight container at room temperature for up to a week, or freeze for up to three months.
