Ingredients

  • 1/2 cup granulated erythritol (or your favorite sugar substitute)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Optional: 1/2 cup sugar-free chocolate chips or nuts

Instructions

  1. In a mixing bowl, beat together the softened cream cheese and erythritol until smooth and creamy.
  2. Incorporate the egg and vanilla extract into the mixture, blending until fully combined.
  3. In a separate bowl, whisk together the almond flour, baking powder, and salt. Gradually add this to the wet ingredients, mixing until a soft dough forms.
  4. If using chocolate chips or nuts, fold them into the dough now.
  5. Using a spoon or cookie scoop, portion out the dough onto a lined baking sheet, spacing them apart.
  6. Preheat your oven to 350°F (175°C) and bake for 10-12 minutes, or until the edges are lightly golden.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
