- 2 cups cooked chicken, shredded
- 1/2 cup bacon, cooked and crumbled
- 1/4 cup ranch dressing
- 8 low-carb tortillas
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Cooking spray or olive oil for baking
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine the shredded chicken, crumbled bacon, ranch dressing, garlic powder, onion powder, salt, and pepper until well mixed.
- Lay out a low-carb tortilla and add a generous spoonful of the chicken mixture and a sprinkle of cheese.
- Tightly roll the tortilla around the filling and place it seam side down on a baking sheet.
- Repeat this process with the remaining tortillas and filling.
- Lightly spray the taquitos with cooking spray or brush them with olive oil for a golden crisp.
- Bake in the preheated oven for 15-20 minutes, until golden brown and crispy.
- Serve your delicious taquitos with extra ranch dressing for dipping.
Notes
For best results, use well-seasoned chicken and do not skip the oil for a crispy exterior.
