Ingredients

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup cauliflower florets
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Brown the ground beef in a large pot over medium heat; drain any excess fat.
- Add the diced onion and minced garlic, cooking until the onion is translucent and soft, about 3-4 minutes.
- Pour in the beef broth and bring the mixture to a rolling boil.
- Add the cauliflower florets and Italian seasoning; reduce heat and let it simmer until the cauliflower is tender, about 10-15 minutes.
- Lower the heat further, then steadily mix in the heavy cream and shredded cheddar cheese, stirring until the soup is creamy and cheese is fully melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions for an added crunch and flavor.
Notes
Can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Consider adding crispy bacon bits or a light green salad for serving.
