Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cauliflower florets
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Brown the ground beef in a large pot over medium heat; drain any excess fat.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent and soft, about 3-4 minutes.
  3. Pour in the beef broth and bring the mixture to a rolling boil.
  4. Add the cauliflower florets and Italian seasoning; reduce heat and let it simmer until the cauliflower is tender, about 10-15 minutes.
  5. Lower the heat further, then steadily mix in the heavy cream and shredded cheddar cheese, stirring until the soup is creamy and cheese is fully melted.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped green onions for an added crunch and flavor.
