- 3–4 pounds pot roast
- 2 large onions, sliced
- 2 cups beef broth
- 1 cup French onion dip
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh herbs (like thyme or rosemary) for garnish
Instructions
- Preheat your oven to 325°F (163°C).
- Heat olive oil in a large skillet over medium-high heat. Season the pot roast with salt and pepper, and then sear it on all sides until nicely browned.
- Once browned, transfer the roast to a roasting pan. In the same pan, add the sliced onions.
- Pour the beef broth and French onion dip over the roast in the pan.
- Cover the pan tightly with foil and bake for about 4 hours, or until the meat is fork-tender.
- After cooking, allow the roast to rest for 15 minutes before slicing. Garnish with fresh herbs and serve warm.
Notes
Feel free to substitute pot roast with chuck roast and experiment with different onion varieties for a sweeter taste. Store leftovers in the refrigerator for up to four days or freeze for up to three months.
