Description

Ingredients

  • 4 cups vegetable broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups chopped kale or spinach
  • 1 cup cooked rice or quinoa
  • Juice of 1 lemon

Instructions

  1. In a large pot, warm a splash of olive oil over medium heat.
  2. Add diced onions, minced garlic, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Pour in the vegetable broth and sprinkle with oregano, thyme, salt, and pepper. Stir well.
  4. Bring the mixture to a gentle simmer. Allow it to cook for around 15 minutes.
  5. Incorporate the chopped kale or spinach and the cooked rice or quinoa. Cook for another 5 minutes.
  6. Squeeze fresh lemon juice over the soup right before serving.

Notes

Serve with crusty Italian bread or a light arugula salad. For added richness, top with grated Parmesan cheese.
