Description

Ingredients

  • 2 (15-ounce) containers of ricotta cheese
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 4 large eggs (room temperature)
  • 1 (15.25 ounce) box of chocolate or devil’s food cake mix
  • 1/2 cup canola or vegetable oil
  • 1 cup of water
  • 3 large eggs
  • 1 (5-ounce) box of instant chocolate pudding
  • 3 cups of cold milk
  • 1 (8-ounce) container of whipped topping, thawed

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray and set it aside.
  2. In a bowl, combine the ricotta cheese, sugar, vanilla extract, and 4 eggs. Mix until smooth; this will be your ricotta layer.
  3. In another large bowl, prepare the chocolate cake mix by combining it with oil, water, and 3 eggs, following package directions.
  4. Pour the cake batter into the greased baking dish and gently dollop the ricotta mixture over the top, spreading it evenly without swirling.
  5. Bake for 40-45 minutes, or until a toothpick comes out clean.
  6. While the cake cools, whisk together the chocolate pudding mix with milk until it thickens.
  7. Once the cake is cooled, spread the pudding evenly over the top, followed by the whipped topping.
  8. Chill in the fridge for at least 2 hours before serving to let the flavors meld.
