- 2 (15-ounce) containers of ricotta cheese
- 1 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 4 large eggs (room temperature)
- 1 (15.25 ounce) box of chocolate or devil’s food cake mix
- 1/2 cup canola or vegetable oil
- 1 cup of water
- 3 large eggs
- 1 (5-ounce) box of instant chocolate pudding
- 3 cups of cold milk
- 1 (8-ounce) container of whipped topping, thawed
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray and set it aside.
- In a bowl, combine the ricotta cheese, sugar, vanilla extract, and 4 eggs. Mix until smooth; this will be your ricotta layer.
- In another large bowl, prepare the chocolate cake mix by combining it with oil, water, and 3 eggs, following package directions.
- Pour the cake batter into the greased baking dish and gently dollop the ricotta mixture over the top, spreading it evenly without swirling.
- Bake for 40-45 minutes, or until a toothpick comes out clean.
- While the cake cools, whisk together the chocolate pudding mix with milk until it thickens.
- Once the cake is cooled, spread the pudding evenly over the top, followed by the whipped topping.
- Chill in the fridge for at least 2 hours before serving to let the flavors meld.
Notes
Serve alongside fresh berries or a drizzle of chocolate syrup for an elevated presentation.
