Ingredients

  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, eggs, garlic, onion, oregano, salt, and pepper. Mix until everything is well-integrated.
  3. Press half of the meatloaf mixture into a greased loaf pan, creating an even base.
  4. Create a well in the center and fill it with shredded mozzarella cheese.
  5. Top with the remaining meatloaf mixture and press down gently to seal.
  6. Spread marinara sauce evenly over the top.
  7. If desired, sprinkle additional breadcrumbs for extra crunch.
  8. Bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
  9. Let the meatloaf rest for about 10 minutes before slicing and serving.

Notes

For added moisture, consider using olive oil in the mixture and avoid overbaking.
