- 1 lb ground chicken
- 1/2 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 eggs
- 1 cup shredded mozzarella cheese
- 1 cup marinara sauce
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, eggs, garlic, onion, oregano, salt, and pepper. Mix until everything is well-integrated.
- Press half of the meatloaf mixture into a greased loaf pan, creating an even base.
- Create a well in the center and fill it with shredded mozzarella cheese.
- Top with the remaining meatloaf mixture and press down gently to seal.
- Spread marinara sauce evenly over the top.
- If desired, sprinkle additional breadcrumbs for extra crunch.
- Bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for about 10 minutes before slicing and serving.
Notes
For added moisture, consider using olive oil in the mixture and avoid overbaking.
