- 1 pound ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup mozzarella cheese, cubed
- 1/4 cup chopped fresh parsley
- 1/4 cup milk
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup marinara sauce
- 1/2 cup additional breadcrumbs for topping
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, milk, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Shape the mixture into a loaf and place it in a baking dish.
- Press the cubes of mozzarella into the center of the meatloaf.
- Generously top the meatloaf with marinara sauce and sprinkle the additional breadcrumbs on top.
- Bake for 45 to 60 minutes, or until the meatloaf is cooked through and the top is golden brown.
- Let it rest for a few minutes before slicing and serving.
Notes
Let the meatloaf rest before slicing to maintain moisture. For a gluten-free option, substitute gluten-free breadcrumbs.
