Ingredients

- 9 oz cheese tortellini (cooked and cooled)
- 1 cup mozzarella balls (ciliegine)
- 1 cup cherry tomatoes (rinsed and dried)
- 12 slices salami (halved and folded)
- 1/2 cup green olives (drained)
- 1/2 cup Kalamata olives (drained)
- 1/3 cup fresh basil leaves (rinsed and patted dry)
- 1/2 cup Italian dressing or herb marinade
Instructions
- Cook the tortellini according to package instructions. Drain and cool.
- Toss cooled tortellini in Italian dressing or herb marinade. Refrigerate for at least 30 minutes.
- Prepare ingredients: rinse and dry cherry tomatoes and basil. Cut salami in half and fold into quarters.
- Drain green and Kalamata olives, and pat the mozzarella dry if necessary.
- Assemble skewers by threading ingredients in alternating order: tortellini, salami, mozzarella, olive, cherry tomato, and basil leaf.
- Brush assembled skewers with any leftover marinade.
- Chill until ready to serve. Enjoy cold or at room temperature.
Notes
Store leftovers in an airtight container in the refrigerator. These skewers can be prepared a few hours in advance, and the flavors will deepen as they marinate.
