  • 2 cups Cooked White Rice (brown rice or quinoa also works well)
  • 1 cup Sour Cream (or yogurt/dairy-free alternatives)
  • 1 cup Nacho Cheese Sauce (homemade or vegan cheese)
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Shredded Mozzarella Cheese (optional)
  • 1 tablespoon Chipotle Sauce
  • 4 large Flour Tortillas (whole wheat or gluten-free)
  • 2 tablespoons Butter or Oil

Instructions

  1. Cook the ground beef in a skillet over medium heat until browned and cooked through.
  2. Stir in the taco seasoning and water; let simmer for 5 minutes.
  3. In a bowl, mix cooked beef with rice, sour cream, nacho cheese sauce, shredded cheddar, shredded mozzarella, and chipotle sauce.
  4. Lay out tortillas and divide the filling mixture evenly.
  5. Roll each tortilla tightly, tucking in the sides to form a burrito.
  6. Heat a skillet with butter or oil; grill burritos seam-side down for 2-3 minutes until golden brown.
  7. Slice in half (if desired) and serve hot.
