- 1 packet Taco Seasoning
- 2 cups Cooked White Rice (brown rice or quinoa also works well)
- 1 cup Sour Cream (or yogurt/dairy-free alternatives)
- 1 cup Nacho Cheese Sauce (homemade or vegan cheese)
- 1 cup Shredded Cheddar Cheese
- 1 cup Shredded Mozzarella Cheese (optional)
- 1 tablespoon Chipotle Sauce
- 4 large Flour Tortillas (whole wheat or gluten-free)
- 2 tablespoons Butter or Oil
Instructions
- Cook the ground beef in a skillet over medium heat until browned and cooked through.
- Stir in the taco seasoning and water; let simmer for 5 minutes.
- In a bowl, mix cooked beef with rice, sour cream, nacho cheese sauce, shredded cheddar, shredded mozzarella, and chipotle sauce.
- Lay out tortillas and divide the filling mixture evenly.
- Roll each tortilla tightly, tucking in the sides to form a burrito.
- Heat a skillet with butter or oil; grill burritos seam-side down for 2-3 minutes until golden brown.
- Slice in half (if desired) and serve hot.
Notes
For meal prep, assemble burritos without grilling and store refrigerated or frozen.
