- 2 fillets of Salmon
- Salt to taste
- Pepper to taste
- 300 g Spinach, thawed and drained
- 1 Onion, sliced
- 2 cloves Garlic, minced
- 200 g Sour Cream
- 150 g Mozzarella
- 1 tbsp Olive Oil
Instructions
- Preheat the oven to 180°C (350°F).
- In a skillet, add olive oil over medium heat. Add sliced onions and cook until soft, about 3-4 minutes. Toss in the minced garlic and sauté for another minute.
- Stir in the thawed and drained spinach, cooking until heated through. Season with salt and pepper.
- Spread the spinach mixture on the bottom of a baking dish, creating an even layer.
- Season the salmon fillets on both sides with salt and pepper. Lay them on top of the spinach.
- In a bowl, mix sour cream with salt and pepper, and spread it over the salmon. Sprinkle shredded mozzarella on top.
- Place the dish in the preheated oven and bake for 20-25 minutes, or until the salmon is cooked through and the cheese is melty.
Notes
For added flavor, consider marinating the salmon in lemon juice and herbs before cooking. Leftovers should be consumed within 3 days.
