Description

A moist and delicious Almond Flour Apple Cake, perfect for gluten-free baking and any occasion.


Ingredients

  • 3 large eggs, separated
  • 0.5 cup granulated sugar
  • 2 tsp vanilla extract (or 1 tsp vanilla plus 1 tsp almond extract)
  • 1.5 cups blanched almond flour
  • 2 tbsp cornstarch (or coconut flour)
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 3 cups peeled, diced apples
  • 0.25 cup sliced almonds for topping
  • 1 tbsp turbinado sugar to sprinkle on top

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a springform pan by greasing it lightly.
  2. In a bowl, beat the egg yolks with the granulated sugar until light and fluffy. Stir in the vanilla extract.
  3. In another bowl, combine the almond flour, cornstarch (or coconut flour), baking powder, and salt. Gradually fold this dry mixture into the wet mixture.
  4. Gently fold in your diced apples until they are evenly distributed in the batter.
  5. In a clean bowl, whisk the egg whites until soft peaks form, then gently fold them into the batter.
  6. Pour the batter into your prepared pan and sprinkle with sliced almonds and turbinado sugar.
  7. Bake for 45-50 minutes or until a toothpick inserted comes out clean. Let it cool before serving.

Notes

Serve with a dusting of powdered sugar, whipped cream, or a scoop of vanilla ice cream.
