- 4 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 1 lemon, juiced and zested
- 2 cups chicken broth
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Set your Instant Pot to sauté mode and add the olive oil.
- Season the chicken breasts with salt, pepper, oregano, and thyme. Sear until browned, about 3-4 minutes per side. Remove and set aside.
- Add the minced garlic to the pot and sauté for about 30 seconds until fragrant.
- Pour in the lemon juice, zest, and chicken broth. Stir to combine and scrape the bottom of the pot.
- Add the orzo to the pot, then place the seared chicken on top.
- Close the lid, set to manual high pressure, and cook for 8 minutes. Allow for a natural release for 5 minutes, then a quick release.
- Fluff the orzo with a fork and serve garnished with fresh parsley.
Notes
For a lighter option, substitute chicken broth with vegetable broth. Add veggies like spinach or kale during the final pressure cooking stage for extra nutrition.
