Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup orzo pasta
  • 1 lemon, juiced and zested
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Set your Instant Pot to sauté mode and add the olive oil.
  2. Season the chicken breasts with salt, pepper, oregano, and thyme. Sear until browned, about 3-4 minutes per side. Remove and set aside.
  3. Add the minced garlic to the pot and sauté for about 30 seconds until fragrant.
  4. Pour in the lemon juice, zest, and chicken broth. Stir to combine and scrape the bottom of the pot.
  5. Add the orzo to the pot, then place the seared chicken on top.
  6. Close the lid, set to manual high pressure, and cook for 8 minutes. Allow for a natural release for 5 minutes, then a quick release.
  7. Fluff the orzo with a fork and serve garnished with fresh parsley.

Notes

For a lighter option, substitute chicken broth with vegetable broth. Add veggies like spinach or kale during the final pressure cooking stage for extra nutrition.
