Ingredients

  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch (optional for thickening)
  • 1 tablespoon water (optional for thickening)
  • Salt and pepper to taste
  • Green onions, sliced (for garnish)

Instructions

  1. In a bowl, combine honey, soy sauce, minced garlic, and rice vinegar.
  2. Place the chicken in your Instant Pot and pour the honey garlic mixture over the top.
  3. Lock the lid in place and set it to cook on high pressure for about 10 minutes.
  4. Once the timer goes off, carefully perform a quick release of the pressure.
  5. If you prefer a thicker sauce, mix the cornstarch with water.
  6. After removing the chicken, switch to sauté mode and stir the cornstarch mixture back into the pot until thickened.
  7. Add the chicken back into the pot, ensuring it’s nicely coated in the sauce.
  8. Garnish with sliced green onions before serving.

Notes

For extra flavor, marinate the chicken in the honey garlic mixture for a couple of hours before cooking. Consider adding sesame oil or chili flakes for an extra kick.
