- 1 pound chicken thighs or breasts
- 1/4 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch (optional for thickening)
- 1 tablespoon water (optional for thickening)
- Salt and pepper to taste
- Green onions, sliced (for garnish)
Instructions
- In a bowl, combine honey, soy sauce, minced garlic, and rice vinegar.
- Place the chicken in your Instant Pot and pour the honey garlic mixture over the top.
- Lock the lid in place and set it to cook on high pressure for about 10 minutes.
- Once the timer goes off, carefully perform a quick release of the pressure.
- If you prefer a thicker sauce, mix the cornstarch with water.
- After removing the chicken, switch to sauté mode and stir the cornstarch mixture back into the pot until thickened.
- Add the chicken back into the pot, ensuring it’s nicely coated in the sauce.
- Garnish with sliced green onions before serving.
Notes
For extra flavor, marinate the chicken in the honey garlic mixture for a couple of hours before cooking. Consider adding sesame oil or chili flakes for an extra kick.
