A creamy and flavorful dish featuring tender chicken breasts in a rich garlic parmesan sauce, perfect for busy weeknights.

- 1.5 – 2 lbs Boneless, Skinless Chicken Breasts (about 3–4 medium breasts)
- 1 Tablespoon Olive Oil
- 1 Tablespoon Unsalted Butter
- 8–10 Cloves Garlic, minced
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 teaspoon Italian Seasoning
- 1/4 teaspoon Red Pepper Flakes (optional)
- 1 cup Low-Sodium Chicken Broth
- 1/2 cup Heavy Cream
- 4 oz Cream Cheese, softened and cubed (optional)
- 3/4 cup Grated Parmesan Cheese
- 1 Tablespoon Cornstarch mixed with 2 Tablespoons Cold Water (optional)
- 2 Tablespoons Fresh Parsley, chopped
Instructions
- Pat the chicken dry and season both sides with salt, black pepper, Italian seasoning, and red pepper flakes if using.
- Select the ‘Sauté’ function on the Instant Pot. Add olive oil and butter. When hot, sear the chicken for 2-3 minutes on each side until golden brown. Remove and set aside.
- Add minced garlic to the pot. Sauté for 30-60 seconds until fragrant.
- Pour in the chicken broth and scrape any brown bits from the bottom of the pot.
- Place the seared chicken back in the pot, secure the lid, and cook on high pressure for 10-12 minutes based on thickness.
- Allow a natural release for 10 minutes, then quick release remaining pressure.
- Remove chicken, set aside. Select ‘Sauté’ again, add cream cheese if using, and whisk until melted. Gradually add heavy cream and then Parmesan cheese until smooth.
- If desired, use cornstarch slurry for a thicker sauce.
- Return chicken to pot or slice it to toss in the sauce. Stir in chopped parsley.
- Plate the chicken and drizzle with sauce. Enjoy!
Notes
For a lighter option, you can swap the heavy cream for half-and-half. Ensure fresh ingredients for maximum flavor.
