Description

A creamy and flavorful dish featuring tender chicken breasts in a rich garlic parmesan sauce, perfect for busy weeknights.


Ingredients

  • 1.52 lbs Boneless, Skinless Chicken Breasts (about 34 medium breasts)
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Unsalted Butter
  • 810 Cloves Garlic, minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Italian Seasoning
  • 1/4 teaspoon Red Pepper Flakes (optional)
  • 1 cup Low-Sodium Chicken Broth
  • 1/2 cup Heavy Cream
  • 4 oz Cream Cheese, softened and cubed (optional)
  • 3/4 cup Grated Parmesan Cheese
  • 1 Tablespoon Cornstarch mixed with 2 Tablespoons Cold Water (optional)
  • 2 Tablespoons Fresh Parsley, chopped

Instructions

  1. Pat the chicken dry and season both sides with salt, black pepper, Italian seasoning, and red pepper flakes if using.
  2. Select the ‘Sauté’ function on the Instant Pot. Add olive oil and butter. When hot, sear the chicken for 2-3 minutes on each side until golden brown. Remove and set aside.
  3. Add minced garlic to the pot. Sauté for 30-60 seconds until fragrant.
  4. Pour in the chicken broth and scrape any brown bits from the bottom of the pot.
  5. Place the seared chicken back in the pot, secure the lid, and cook on high pressure for 10-12 minutes based on thickness.
  6. Allow a natural release for 10 minutes, then quick release remaining pressure.
  7. Remove chicken, set aside. Select ‘Sauté’ again, add cream cheese if using, and whisk until melted. Gradually add heavy cream and then Parmesan cheese until smooth.
  8. If desired, use cornstarch slurry for a thicker sauce.
  9. Return chicken to pot or slice it to toss in the sauce. Stir in chopped parsley.
  10. Plate the chicken and drizzle with sauce. Enjoy!

Notes

For a lighter option, you can swap the heavy cream for half-and-half. Ensure fresh ingredients for maximum flavor.
