Description

A comforting and filling dish featuring tender beef cooked in a rich gravy, perfect for weeknight dinners or special gatherings.


Ingredients

  • 1.5 pounds stew meat
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional for thickening)
  • 2 tablespoons water (optional for thickening)

Instructions

  1. Turn on the Instant Pot to the sauté setting and heat the olive oil.
  2. Add the chopped onion and minced garlic; sauté until softened, about 2-3 minutes.
  3. Add the stew meat, browning all sides for about 5 minutes.
  4. Stir in the beef broth, Worcestershire sauce, paprika, salt, and pepper until combined.
  5. Close the lid, set to manual high pressure, and cook for 35 minutes.
  6. Allow the pressure to release naturally for 10 minutes before using the quick release for any remaining pressure.
  7. If desired, mix cornstarch and water in a small bowl and stir into the pot, sauté until gravy thickens.
  8. Plate the beef tips over mashed potatoes or your starch of choice and enjoy!

Notes

For a lighter version, use leaner cuts of beef or chicken. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.
