Ingredients

- 1.5 pounds stew meat
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons cornstarch (optional for thickening)
- 2 tablespoons water (optional for thickening)
Instructions
- Turn on the Instant Pot to the sauté setting and heat the olive oil.
- Add the chopped onion and minced garlic; sauté until softened, about 2-3 minutes.
- Add the stew meat, browning all sides for about 5 minutes.
- Stir in the beef broth, Worcestershire sauce, paprika, salt, and pepper until combined.
- Close the lid, set to manual high pressure, and cook for 35 minutes.
- Allow the pressure to release naturally for 10 minutes before using the quick release for any remaining pressure.
- If desired, mix cornstarch and water in a small bowl and stir into the pot, sauté until gravy thickens.
- Plate the beef tips over mashed potatoes or your starch of choice and enjoy!
Notes
For a lighter version, use leaner cuts of beef or chicken. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 3 months.
