- 1 kg chicken, cut into pieces
- 2 tablespoons vegetable oil
- 2 large onions, finely chopped
- 2 tablespoons ginger-garlic paste
- 3 large tomatoes, pureed
- 1/2 cup plain yogurt
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt, to taste
- 1/2 cup fresh cilantro leaves, chopped
- 3 tablespoons cream (optional)
- Water, as needed
Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add finely chopped onions and sauté until they turn golden brown.
- Incorporate the ginger-garlic paste and sauté for about 2 minutes until fragrant.
- Pour in the pureed tomatoes and cook until the mixture thickens and the oil separates.
- Reduce the heat and stir in the ground coriander, cumin, turmeric, red chili powder, and salt. Mix well and cook for 2 more minutes.
- Add the chicken pieces, stirring to coat with the spice mixture. Cook for 5 minutes to begin browning.
- In a bowl, whisk the yogurt until smooth. Stir it into the pan, ensuring you prevent curdling as you cook for another 10 minutes on medium heat.
- Add enough water to cover the chicken and bring it to a boil. Reduce the heat and let it simmer uncovered for 20-25 minutes until the chicken is tender.
- Stir in the garam masala and cream if using, cooking for an additional 5 minutes.
- Garnish with chopped cilantro before serving.
Notes
Serve with basmati rice or naan. Consider pairing with cucumber raita or sautéed greens.
