Description

A delightful and quick pasta dish featuring garlic, red pepper flakes, and a hint of lemon, perfect for busy weeknights.


Ingredients

  • 12 oz spaghetti or linguine
  • 1/4 cup olive oil
  • 4 garlic cloves, thinly sliced
  • 1/2 tsp red pepper flakes
  • 1/4 cup parsley, chopped
  • 1 tsp lemon zest
  • 1/2 cup Parmesan cheese, grated
  • Salt and black pepper to taste

Instructions

  1. Boil water in a large pot and add pasta. Cook until al dente, reserving 1 cup of pasta water, and then drain.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté for 1-2 minutes until fragrant.
  3. Toss in the red pepper flakes and cook for an additional 30 seconds.
  4. Add the drained pasta to the skillet, tossing it gently to coat with the garlic oil. If it appears dry, add a splash of the reserved pasta water until you reach your desired consistency.
  5. Remove the skillet from heat and stir in the chopped parsley, lemon zest, and grated Parmesan. Season with salt and black pepper to taste.
  6. Serve hot, garnished with extra cheese and parsley.

Notes

Best paired with arugula salad or grilled chicken for a more substantial meal. Store leftovers in an airtight container in the fridge for up to 3 days.
