Ingredients

- 12 oz spaghetti or linguine
- 1/4 cup olive oil
- 4 garlic cloves, thinly sliced
- 1/2 tsp red pepper flakes
- 1/4 cup parsley, chopped
- 1 tsp lemon zest
- 1/2 cup Parmesan cheese, grated
- Salt and black pepper to taste
Instructions
- Boil water in a large pot and add pasta. Cook until al dente, reserving 1 cup of pasta water, and then drain.
- In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté for 1-2 minutes until fragrant.
- Toss in the red pepper flakes and cook for an additional 30 seconds.
- Add the drained pasta to the skillet, tossing it gently to coat with the garlic oil. If it appears dry, add a splash of the reserved pasta water until you reach your desired consistency.
- Remove the skillet from heat and stir in the chopped parsley, lemon zest, and grated Parmesan. Season with salt and black pepper to taste.
- Serve hot, garnished with extra cheese and parsley.
Notes
Best paired with arugula salad or grilled chicken for a more substantial meal. Store leftovers in an airtight container in the fridge for up to 3 days.
