Ingredients

  • 4 large eggs
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 tablespoon espresso powder (optional)
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 325°F and butter a 9×13-inch baking dish.
  2. In a large bowl, beat the eggs with the granulated sugar for about 5–10 minutes until pale and thick.
  3. Gently mix in the vanilla extract and melted butter until combined.
  4. Sift together cocoa powder, flour, espresso powder (if using), and salt in a separate bowl.
  5. Carefully fold the dry mixture into the wet ingredients, being cautious not to over-mix.
  6. Pour the batter into the prepared baking dish and set it in a water bath.
  7. Bake for 55–65 minutes, until the top is crisp and the center remains soft.
  8. Let cool for 10 minutes before serving.
