A vibrant salad featuring Honeycrisp apples, feta cheese, and candied walnuts, balanced with a honey-lemon dressing. Perfect for gatherings or light meals.


Ingredients

  • 4 cups mixed greens
  • 2 large Honeycrisp apples, sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup dried cranberries
  • 1/4 cup thinly sliced red onion
  • 1/3 cup candied walnuts
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. If greens aren’t pre-washed, rinse and dry them. Thinly slice the Honeycrisp apples and red onion.
  2. In a small bowl or jar, combine olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper. Whisk until blended.
  3. In a large salad bowl, combine the mixed greens, apple slices, crumbled feta, dried cranberries, red onion, and candied walnuts.
  4. Just before serving, add the dressing and toss gently to coat all ingredients.

Notes

Store leftover salad and dressing separately to maintain freshness for up to 2 days.
