  • 3 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • Optional garnishes: Chopped fresh parsley or toasted sesame seeds

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and trim the green beans, snapping off the stem ends. Peel and cut the carrots into roughly 1-inch thick pieces.
  3. In a small bowl, whisk together the olive oil, honey, balsamic vinegar, minced garlic, thyme, salt, and pepper until combined.
  4. In a large bowl, toss the carrots and green beans with the honey glaze until they’re evenly coated.
  5. Spread them out in a single layer on a large baking sheet.
  6. Bake for 20-25 minutes, checking for doneness around the 20-minute mark.
  7. If desired, broil for an additional 1-2 minutes for caramelization.
  8. Allow the vegetables to sit for a minute before serving. Garnish with parsley or sesame seeds if desired.

Notes

For best results, cut vegetables to similar sizes to ensure even cooking. Fresh vegetables are recommended for the best texture.
