  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sliced carrots and green beans with olive oil, honey, lemon juice, cinnamon, nutmeg, salt, and pepper until evenly coated.
  3. Spread the vegetables in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until the carrots are tender and slightly caramelized and the green beans are tender-crisp, stirring halfway through cooking.
  5. Remove from the oven and transfer to a serving dish.
  6. Garnish with chopped fresh parsley.
  7. Serve immediately and enjoy!

Notes

For a vegan option, substitute honey with maple syrup. These veggies are best served fresh, but leftovers can be stored in an airtight container in the fridge for up to three days.
