Description

A simple and satisfying weeknight dish featuring chicken or turkey sausage, sweet potatoes, and broccoli with a honey garlic glaze.


Ingredients

  • 14 ounces chicken or turkey sausage, sliced into 1/2-inch rounds
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 2 cups broccoli florets, cut into 1/2-inch pieces
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, finely minced

Instructions

  1. Preheat your oven to 400°F. Line a sheet pan with parchment paper or lightly coat it with nonstick spray.
  2. Spread the sliced sausage, diced sweet potatoes, and broccoli florets in an even layer on the prepared sheet pan.
  3. In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Stir in honey, low-sodium soy sauce, apple cider vinegar, salt, and black pepper. Simmer for 2-3 minutes, stirring occasionally.
  5. Pour the honey garlic glaze evenly over the sausage, sweet potatoes, and broccoli. Toss until everything is well-coated.
  6. Roast in the oven for 25-30 minutes, stirring once halfway through, until the sweet potatoes are fork-tender and the sausage is nicely browned.
  7. Remove from the oven and sprinkle with freshly minced parsley before serving.

Notes

Feel free to substitute chicken or turkey sausage with vegan sausage. To make it gluten-free, use gluten-free soy sauce.
