  • 14 ounces chicken or turkey sausage, sliced into 1/2-inch rounds
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 2 cups broccoli florets, cut into 1/2-inch pieces
  • 1 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon apple cider vinegar
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, finely minced

Instructions

  1. Preheat your oven to 400°F. Line a sheet pan with parchment paper or lightly coat it with nonstick spray for easier cleanup.
  2. Arrange the sliced sausage, diced sweet potatoes, and broccoli florets on the prepared sheet pan in a single layer.
  3. In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté it for about 1 minute until it becomes fragrant.
  4. Stir in the honey, low-sodium soy sauce, apple cider vinegar, salt, and black pepper. Allow it to simmer for 2 to 3 minutes while stirring occasionally.
  5. Drizzle the honey-garlic glaze evenly over the sausage, sweet potatoes, and broccoli. Toss everything together until all ingredients are well-coated.
  6. Place the pan in the oven and roast for 25 to 30 minutes, stirring halfway through, until the sweet potatoes are fork-tender, and the sausage is deliciously browned.
  7. Once done, remove from the oven and sprinkle freshly minced parsley on top before serving.
