- 14 ounces chicken or turkey sausage, sliced into 1/2-inch rounds
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 2 cups broccoli florets, cut into 1/2-inch pieces
- 1 tablespoon unsalted butter
- 4 cloves garlic, minced
- 1/4 cup honey
- 1/4 cup low-sodium soy sauce
- 1 tablespoon apple cider vinegar
- Salt and black pepper, to taste
- 2 tablespoons fresh parsley, finely minced
Instructions
- Preheat your oven to 400°F. Line a sheet pan with parchment paper or lightly coat it with nonstick spray for easier cleanup.
- Arrange the sliced sausage, diced sweet potatoes, and broccoli florets on the prepared sheet pan in a single layer.
- In a small saucepan over medium heat, melt the butter. Add the minced garlic and sauté it for about 1 minute until it becomes fragrant.
- Stir in the honey, low-sodium soy sauce, apple cider vinegar, salt, and black pepper. Allow it to simmer for 2 to 3 minutes while stirring occasionally.
- Drizzle the honey-garlic glaze evenly over the sausage, sweet potatoes, and broccoli. Toss everything together until all ingredients are well-coated.
- Place the pan in the oven and roast for 25 to 30 minutes, stirring halfway through, until the sweet potatoes are fork-tender, and the sausage is deliciously browned.
- Once done, remove from the oven and sprinkle freshly minced parsley on top before serving.
Notes
Feel free to swap the veggies based on preference. Serve with rice, a light salad, or crusty bread. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
