- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a skillet over medium heat and sear the seasoned chicken for 3–4 minutes on each side until golden brown. Remove and set aside.
- In a mixing bowl, whisk together BBQ sauce, honey, soy sauce, and minced garlic.
- In the same skillet, toast the uncooked rice for 1–2 minutes, occasionally stirring.
- Add the chicken broth and half of the BBQ mixture, stirring to combine with the rice.
- Return the seared chicken to the pan and pour the remaining sauce over the top.
- Cover and simmer on low heat for about 15 minutes.
- If using, add mixed vegetables to the rice, cover, and cook for an additional 5 minutes, or until the rice is tender and the chicken is cooked through.
- Let the dish sit for 5 minutes before serving. Garnish with chopped green onions and enjoy!
Notes
For best flavor, marinate chicken in BBQ sauce and honey for at least 30 minutes. Can substitute chicken thighs with breasts or use brown rice for a healthier option.
