A quick and comforting dish featuring tender chicken thighs, hearty rice, and a flavorful honey BBQ sauce.

- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a skillet over medium heat and sear the chicken for 3–4 minutes on each side until golden brown. Remove from the skillet and set aside.
- In a bowl, mix the BBQ sauce, honey, and minced garlic.
- In the same pan, toast the uncooked rice for 1–2 minutes. Add chicken broth and half of your sauce mixture, stirring to combine.
- Return the chicken to the pan and pour the remaining sauce over the top. Cover and let it simmer on low heat for about 15 minutes.
- If using, add mixed vegetables, cover, and continue to cook for an additional 5 minutes or until the rice is tender and the chicken is thoroughly cooked.
- Let it sit for 5 minutes after cooking. Garnish with chopped green onions and serve hot.
Notes
Serve with steamed broccoli or a crisp green salad for a complete meal. Leftovers can be stored in an airtight container for up to 3 days.
