Description

A quick and comforting dish featuring tender chicken thighs, hearty rice, and a flavorful honey BBQ sauce.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3–4 minutes on each side until golden brown. Remove from the skillet and set aside.
  3. In a bowl, mix the BBQ sauce, honey, and minced garlic.
  4. In the same pan, toast the uncooked rice for 1–2 minutes. Add chicken broth and half of your sauce mixture, stirring to combine.
  5. Return the chicken to the pan and pour the remaining sauce over the top. Cover and let it simmer on low heat for about 15 minutes.
  6. If using, add mixed vegetables, cover, and continue to cook for an additional 5 minutes or until the rice is tender and the chicken is thoroughly cooked.
  7. Let it sit for 5 minutes after cooking. Garnish with chopped green onions and serve hot.

Notes

Serve with steamed broccoli or a crisp green salad for a complete meal. Leftovers can be stored in an airtight container for up to 3 days.
