Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season the chicken: Sprinkle the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Sear the chicken: In a skillet over medium heat, add the chicken and sear for 3–4 minutes on each side until golden brown. Remove and set aside.
  3. Prepare the sauce: In a bowl, mix BBQ sauce, honey, and minced garlic.
  4. Toast the rice: In the same pan, toast the uncooked rice for 1–2 minutes until fragrant.
  5. Cook the rice: Pour in chicken broth and half of the BBQ mixture. Stir to combine.
  6. Combine chicken and sauce: Return the seared chicken to the pan and pour the remaining sauce over the top.
  7. Simmer: Cover and simmer on low heat for 15 minutes.
  8. Add vegetables: Toss in mixed vegetables (if using), cover, and cook for an additional 5 minutes or until the rice is tender and chicken is cooked through.
  9. Rest: Let sit for 5 minutes before serving. Garnish with green onions and serve hot.

Notes

Can substitute chicken thighs with chicken breasts or use chickpeas/tofu for a vegetarian version.
