- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Season the chicken: Sprinkle the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Sear the chicken: In a skillet over medium heat, add the chicken and sear for 3–4 minutes on each side until golden brown. Remove and set aside.
- Prepare the sauce: In a bowl, mix BBQ sauce, honey, and minced garlic.
- Toast the rice: In the same pan, toast the uncooked rice for 1–2 minutes until fragrant.
- Cook the rice: Pour in chicken broth and half of the BBQ mixture. Stir to combine.
- Combine chicken and sauce: Return the seared chicken to the pan and pour the remaining sauce over the top.
- Simmer: Cover and simmer on low heat for 15 minutes.
- Add vegetables: Toss in mixed vegetables (if using), cover, and cook for an additional 5 minutes or until the rice is tender and chicken is cooked through.
- Rest: Let sit for 5 minutes before serving. Garnish with green onions and serve hot.
Notes
Can substitute chicken thighs with chicken breasts or use chickpeas/tofu for a vegetarian version.
