Ingredients

  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups shredded rotisserie chicken
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups egg noodles
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Toss in garlic, carrots, and celery. Cook for another 5 minutes until soft.
  4. Pour in the chicken broth and bring it to a simmer.
  5. Stir in the shredded chicken, thyme, salt, and pepper. Let it all simmer for about 20 minutes.
  6. Add the noodles and cook for an additional 8–10 minutes until tender.
  7. Taste and adjust seasonings if necessary.
  8. Serve hot, garnished with fresh parsley if desired.

Notes
