- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 8 cups chicken broth
- 2 cups shredded rotisserie chicken
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups egg noodles
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Toss in garlic, carrots, and celery. Cook for another 5 minutes until soft.
- Pour in the chicken broth and bring it to a simmer.
- Stir in the shredded chicken, thyme, salt, and pepper. Let it all simmer for about 20 minutes.
- Add the noodles and cook for an additional 8–10 minutes until tender.
- Taste and adjust seasonings if necessary.
- Serve hot, garnished with fresh parsley if desired.
Notes
For deeper flavor, add a splash of lemon juice or fresh thyme sprigs while simmering. A dash of soy sauce can add an umami kick.
