Ingredients

  • 2 ½ cups eggnog
  • ½ cup heavy whipping cream
  • ⅔ cup granulated sugar
  • 4 tablespoons cornstarch
  • ¼ teaspoon salt
  • ½ teaspoon ground nutmeg
  • 4 large egg yolks
  • 1 teaspoon rum extract (or more to taste)
  • 3 tablespoons unsalted butter, cut into pieces
  • Whipped cream, for garnish
  • Grated whole nutmeg, for garnish
  • Sugared cranberries (optional)

Instructions

  1. Mix the eggnog and heavy cream in a glass measuring cup and set aside.
  2. Whisk together the sugar, cornstarch, salt, and ground nutmeg in a medium saucepan until well combined.
  3. Add the egg yolks to the dry mixture and whisk until smooth.
  4. Gradually pour the eggnog and cream mixture into the egg mixture while whisking constantly.
  5. Place the saucepan over medium heat and stir constantly until the mixture thickens and just begins to boil, about 8-10 minutes.
  6. Allow the mixture to boil for an additional 30 seconds before removing it from the heat.
  7. Stir in the rum extract and butter, mixing until melted and smooth.
  8. Pass the pudding through a fine-mesh sieve into a bowl to ensure a silky texture.
  9. Cover the bowl with plastic wrap, pressing it directly onto the pudding’s surface, and chill in the refrigerator for at least 4 hours or overnight.
  10. Garnish with whipped cream, grated nutmeg, and sugared cranberries before serving.

Notes

Serve in individual bowls for an elegant presentation. This pudding is best made a day in advance.
