- 1 pound ground beef
- 4 cups diced potatoes
- 1 can cream of mushroom soup
- 1 cup shredded cheese (cheddar works beautifully)
- 1 onion, diced
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, cook the ground beef with the diced onion. Stir until browned, then drain any excess fat.
- In a large baking dish, layer the diced potatoes first, followed by the beef mixture.
- Pour the cream of mushroom soup evenly over the layers.
- Season with salt and pepper to taste.
- Sprinkle the shredded cheese on top.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and continue baking for an additional 15 minutes, or until the cheese is melted and bubbly, and the potatoes are tender.
Notes
Leftover Hobo Casserole can be stored in an airtight container in the refrigerator for up to three days. For longer storage, freeze it for up to three months.
