Tender beef bites simmered in a rich garlic butter sauce, paired with hearty baby potatoes, perfect for busy weeknights or gatherings.
Ingredients
Scale
- 1.5 lbs beef stew meat
- 1 lb baby potatoes, halved
- 4 cloves garlic, minced
- 1/4 cup unsalted butter
- 1 cup beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp rosemary
- 1 tsp thyme
Instructions
- In your slow cooker, combine the beef stew meat with salt, pepper, rosemary, and thyme. Stir to coat the meat evenly with the spices.
- Place the halved baby potatoes directly on top of the seasoned beef.
- In a small saucepan, melt the unsalted butter over medium heat. Add in the minced garlic and sauté for 1-2 minutes until it becomes fragrant.
- Stir in the beef broth, mixing well. Then pour this garlic butter mixture over the beef and potatoes in the slow cooker.
- Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the beef reaches tenderness.
- Once cooked, serve warm and enjoy this cozy dinner!
Notes
For an even richer flavor, consider searing the beef before adding it to the slow cooker. This dish is flexible—feel free to add soy sauce, carrots, or substitute the beef with chicken.
