- 8 oz penne pasta
- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes (with juices)
- 1 cup low-sodium beef broth
- 1/2 cup plain Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Olive oil (for cooking)
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic and cook for an additional minute.
- Add lean ground beef and cook until browned, breaking it apart as it cooks.
- Stir in diced tomatoes, beef broth, Greek yogurt, and Parmesan cheese. Season with Italian seasoning, salt, and pepper. Simmer for about 5 minutes.
- Fold in the cooked penne pasta and toss gently until well combined and heated through.
- Serve garnished with fresh basil or parsley and enjoy!
Notes
