Description

A quick and satisfying quesadilla packed with tender chicken, creamy Greek yogurt, and zesty ranch flavor, all in a low-carb tortilla.


Ingredients

  • Low-carb tortilla
  • Cooked chicken breast (shredded or diced)
  • Greek yogurt
  • Laughing Cow cheese (or any soft cheese)
  • Ranch seasoning
  • Cooking spray or a small amount of oil

Instructions

  1. Preheat your skillet over medium heat and lightly spray it with cooking spray or add a bit of oil.
  2. Spread a generous layer of Greek yogurt over one side of the low-carb tortilla.
  3. Top the yogurt with cooked chicken breast, a slice or two of Laughing Cow cheese, and a sprinkle of ranch seasoning.
  4. Carefully fold the tortilla in half and transfer it to the skillet.
