A satisfying and protein-packed quesadilla that is quick to make and perfect for any meal.
Ingredients

- 1 low-carb tortilla
- 1/2 cup cooked chicken, shredded
- 2 tablespoons Greek yogurt
- 2 Laughing Cow cheese wedges
- 1 tablespoon ranch seasoning
- Cooking spray or oil for greasing
Instructions
- In a bowl, combine the shredded chicken, Greek yogurt, Laughing Cow cheese, and ranch seasoning. Mix until well blended.
- Preheat a non-stick skillet over medium heat and grease lightly with cooking spray or oil.
- Place the low-carb tortilla in the skillet.
- Spread the chicken mixture evenly over one half of the tortilla.
- Fold the tortilla over to cover the filling.
- Cook for about 3-4 minutes on each side until golden brown and the cheese is melted.
- Slice and serve hot.
Notes
Serve with fresh veggies, a light salad, or homemade salsa. Can add guacamole or extra Greek yogurt.
