High-Protein Chicken Ranch Quesadilla

Description

A satisfying and protein-packed quesadilla that is quick to make and perfect for any meal.


Ingredients

  • 1 low-carb tortilla
  • 1/2 cup cooked chicken, shredded
  • 2 tablespoons Greek yogurt
  • 2 Laughing Cow cheese wedges
  • 1 tablespoon ranch seasoning
  • Cooking spray or oil for greasing

Instructions

  1. In a bowl, combine the shredded chicken, Greek yogurt, Laughing Cow cheese, and ranch seasoning. Mix until well blended.
  2. Preheat a non-stick skillet over medium heat and grease lightly with cooking spray or oil.
  3. Place the low-carb tortilla in the skillet.
  4. Spread the chicken mixture evenly over one half of the tortilla.
  5. Fold the tortilla over to cover the filling.
  6. Cook for about 3-4 minutes on each side until golden brown and the cheese is melted.
  7. Slice and serve hot.

Notes

Serve with fresh veggies, a light salad, or homemade salsa. Can add guacamole or extra Greek yogurt.
