Ingredients

  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 1/2 cup protein powder (your choice of flavor)
  • 1/2 cup honey or maple syrup
  • 1 cup almond milk (or any milk you prefer)
  • 1/3 cup unsweetened applesauce
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups fresh or frozen blueberries
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, toss together the whole wheat flour, rolled oats, protein powder, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, whisk together your honey (or maple syrup), almond milk, unsweetened applesauce, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined. Be cautious not to over-mix.
  5. Carefully fold in the blueberries to preserve their shape.
  6. Divide the batter evenly into the muffin cups using a spoon or an ice cream scoop.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack. Enjoy!
