Description

A hearty and nutritious white chicken chili that is packed with protein and perfect for cozy gatherings or weeknight dinners.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can white beans (rinsed and drained)
  • 1 cup chicken broth
  • 1 cup corn (frozen or canned)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp chili powder
  • Salt and pepper (to taste)
  • 1 cup cream or Greek yogurt (for creaminess)

Instructions

  1. In a large pot or Instant Pot, heat a little oil over medium heat. Sauté the chopped onion and minced garlic until softened, about 3-5 minutes.
  2. Add the shredded chicken, rinsed white beans, corn, chicken broth, cumin, oregano, chili powder, salt, and pepper. Stir well to combine.
  3. For the stovetop method: Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes.
  4. For the slow cooker: Combine all the ingredients in the pot and cook on low for 6-8 hours.
  5. For the Instant Pot: Seal the lid and set on high pressure for 10 minutes, followed by a quick release of steam when done.
  6. Just before serving, stir in the cream or Greek yogurt for that extra creaminess!
  7. Serve hot, topped with avocado, cilantro, and a squeeze of lime if desired.
