- 1 cup rolled oats
- 1 cup grated carrots
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup applesauce
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup raisins or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine rolled oats, grated carrots, almond flour, baking soda, cinnamon, nutmeg, and salt. Mix well.
- In a separate bowl, blend honey (or maple syrup) and applesauce until combined.
- Pour the wet mixture into the dry ingredients, stirring until just mixed. Fold in raisins or walnuts if desired.
- Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them apart.
- Bake for 10-12 minutes or until the edges turn golden brown.
- Let cool on the sheet for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze for up to 3 months.
