Delicious and nutritious cookies that combine the flavors of carrot cake with the wholesome goodness of oats, perfect for breakfast or a snack.


Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup applesauce
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup raisins or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine rolled oats, grated carrots, almond flour, baking soda, cinnamon, nutmeg, and salt. Mix well.
  3. In a separate bowl, blend honey (or maple syrup) and applesauce until combined.
  4. Pour the wet mixture into the dry ingredients, stirring until just mixed. Fold in raisins or walnuts if desired.
  5. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them apart.
  6. Bake for 10-12 minutes or until the edges turn golden brown.
  7. Let cool on the sheet for a few minutes before transferring to a wire rack.
