- 1 lb chicken breast, diced
- 1 cup rice
- 1 cup chicken broth
- 1/2 cup light cream cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon Cajun seasoning
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Chopped parsley for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced chicken and cook until it turns golden brown.
- Stir in the chopped onion, minced garlic, and diced bell pepper; cook until the vegetables soften.
- Add the rice and pour in the chicken broth; bring it all to a boil.
- Once boiling, reduce heat to low. Cover and let it simmer for about 15 minutes or until the rice is cooked through.
- In a separate bowl, mix the light cream cheese and Parmesan cheese until smooth. Stir this into the skillet until everything is well combined.
- Season the dish with Cajun seasoning, salt, and pepper to your taste.
- Garnish with chopped parsley if desired and serve warm.
Notes
For added protein, consider adding black beans or shrimp. Store leftovers in an airtight container for up to 4 days.
