- 1/4 cup coconut flour
- 1/3 cup erythritol or sweetener of choice
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 2 eggs
- 1/4 cup unsweetened applesauce
- 2 tbsp melted coconut oil
- Cinnamon sugar for coating (optional)
Instructions
- In a large bowl, mix together almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt until combined.
- In another bowl, whisk the eggs, applesauce, and melted coconut oil until smooth.
- Pour the wet ingredients into the dry ingredients and stir well until everything is evenly mixed.
- Preheat your air fryer to 375°F (190°C) for about 5 minutes.
- Using a small cookie scoop or your hands, form the mixture into small balls.
- Place the balls in the air fryer basket in a single layer, ensuring they aren’t overcrowded.
- Cook for 8-10 minutes or until the churro bites are golden brown and cooked through.
- If desired, toss the warm churro bites in cinnamon sugar for that extra touch of sweetness.
- Serve warm and enjoy!
Notes
Can be served with dark chocolate or caramel sauce for dipping. Store leftovers in an airtight container for up to two days or freeze for longer storage.
