Ingredients

  • 1 pound ground turkey
  • 2 bell peppers, chopped (any color)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Rice, lettuce wraps, or taco shells, for serving

Instructions

  1. In a skillet over medium heat, warm a couple of tablespoons of olive oil.
  2. Add the chopped onion and minced garlic; sauté until softened, about 2-3 minutes.
  3. Stir in the ground turkey, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  4. Toss in the chopped bell peppers, chili powder, cumin, salt, and pepper. Stir well and cook until the peppers are tender, about 5 minutes.
  5. Enjoy it over cooked rice, nestled in lettuce wraps, or loaded into taco shells!

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days, or freeze portions for 2-3 months. Experiment with additional spices or vegetables to cater to your taste.
