A deliciously satisfying bowl combining savory ground beef with sweet, spicy hot honey and roasted sweet potatoes.

- 1 lb lean ground beef (93%)
- 2 medium sweet potatoes, peeled and diced
- 1 sliced avocado
- 1 cup cottage cheese
- 1 diced yellow onion
- 2 tbsp olive oil
- 1 packet taco seasoning (or 2 tbsp)
- 2 tbsp hot honey
- ½ tsp paprika
- ½ tsp garlic powder
- ¼ tsp ground cinnamon
- Salt and pepper, to taste
- Optional: chopped cilantro, red pepper flakes, lime juice
Instructions
- Preheat your oven to 400°F (200°C).
- Toss diced sweet potatoes with 1 tbsp of olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast for 40–45 minutes, stirring halfway through for even cooking.
- Heat the remaining 1 tbsp of olive oil in a skillet over medium heat. Sauté the diced onion until it softens, about 3–4 minutes.
- Add the ground beef to the skillet. Cook for 6–8 minutes, breaking it apart as it cooks. Stir in taco seasoning, salt, and pepper, continuing to cook until browned.
- Assemble bowls starting with a layer of sweet potatoes at the bottom, followed by the ground beef, avocado slices, and a generous scoop of cottage cheese.
- Drizzle hot honey over each bowl before adding optional garnishes like chopped cilantro, red pepper flakes, or a squeeze of lime juice.
- Serve immediately and enjoy while warm.
