Description

A deliciously satisfying bowl combining savory ground beef with sweet, spicy hot honey and roasted sweet potatoes.


Ingredients

  • 1 lb lean ground beef (93%)
  • 2 medium sweet potatoes, peeled and diced
  • 1 sliced avocado
  • 1 cup cottage cheese
  • 1 diced yellow onion
  • 2 tbsp olive oil
  • 1 packet taco seasoning (or 2 tbsp)
  • 2 tbsp hot honey
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp ground cinnamon
  • Salt and pepper, to taste
  • Optional: chopped cilantro, red pepper flakes, lime juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss diced sweet potatoes with 1 tbsp of olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast for 40–45 minutes, stirring halfway through for even cooking.
  3. Heat the remaining 1 tbsp of olive oil in a skillet over medium heat. Sauté the diced onion until it softens, about 3–4 minutes.
  4. Add the ground beef to the skillet. Cook for 6–8 minutes, breaking it apart as it cooks. Stir in taco seasoning, salt, and pepper, continuing to cook until browned.
  5. Assemble bowls starting with a layer of sweet potatoes at the bottom, followed by the ground beef, avocado slices, and a generous scoop of cottage cheese.
  6. Drizzle hot honey over each bowl before adding optional garnishes like chopped cilantro, red pepper flakes, or a squeeze of lime juice.
  7. Serve immediately and enjoy while warm.
