Description

A vibrant bowl of Greek Chicken, with tender shredded chicken, hearty quinoa or rice, and crunchy vegetables, topped with a luscious homemade tzatziki sauce.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups cooked quinoa or rice
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 cups mixed greens
  • 1/4 cup fresh parsley, chopped
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine shredded chicken, quinoa or rice, diced cucumber, bell pepper, cherry tomatoes, red onion, feta cheese, olives, mixed greens, and parsley.
  2. In a separate small bowl, mix Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and pepper for the tzatziki.
  3. Serve the chicken and vegetable mixture in bowls, generously topped with tzatziki sauce.
