- 2 cups cooked chicken, shredded
- 2 cups cooked quinoa or rice
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 2 cups mixed greens
- 1/4 cup fresh parsley, chopped
- 1 cup Greek yogurt
- 1 cucumber, grated and drained
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine shredded chicken, quinoa or rice, diced cucumber, bell pepper, cherry tomatoes, red onion, feta cheese, olives, mixed greens, and parsley.
- In a separate small bowl, mix Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, salt, and pepper for the tzatziki.
- Serve the chicken and vegetable mixture in bowls, generously topped with tzatziki sauce.
