  • 3 cloves Garlic, minced
  • 2 tablespoons Lemon Juice

  • 1 Cucumber, chopped
  • 2 Tomatoes, diced
  • 1 Red Onion, sliced
  • 1/2 cup Feta Cheese, crumbled
  • 1/4 cup Fresh Parsley, chopped
  • 1 cup Cooked Quinoa or Rice
  • 1/2 cup Tzatziki Sauce

Instructions

  1. Marinate the Chicken: In a bowl, mix olive oil, minced garlic, lemon juice, salt, and black pepper. Add the chicken breasts and coat well. Let marinate in the fridge for at least 30 minutes.
  2. Cook the Chicken: Preheat your grill or oven. Cook the chicken until fully cooked through (about 6-7 minutes per side if grilling; 20-25 minutes if baking at 400°F). Once done, slice the chicken into strips.
  3. Make the Tzatziki: In a bowl, combine yogurt, grated cucumber, minced garlic, dill, and lemon juice. Mix well and set aside.
  4. Assemble the Bowls: Start with a base of cooked quinoa or rice. Top with slices of chicken, followed by chopped cucumber, tomatoes, red onion, crumbled feta cheese, and fresh parsley.
  5. Finish with Tzatziki: Drizzle a generous amount of tzatziki sauce over your creations and serve!

Notes

For even juicier chicken, marinate longer (up to 2 hours). Grating the cucumber for the tzatziki maintains a creamy texture.
