- 2 tablespoons Olive Oil
- 3 cloves Garlic, minced
- 2 tablespoons Lemon Juice

- 1 Cucumber, chopped
- 2 Tomatoes, diced
- 1 Red Onion, sliced
- 1/2 cup Feta Cheese, crumbled
- 1/4 cup Fresh Parsley, chopped
- 1 cup Cooked Quinoa or Rice
- 1/2 cup Tzatziki Sauce
Instructions
- Marinate the Chicken: In a bowl, mix olive oil, minced garlic, lemon juice, salt, and black pepper. Add the chicken breasts and coat well. Let marinate in the fridge for at least 30 minutes.
- Cook the Chicken: Preheat your grill or oven. Cook the chicken until fully cooked through (about 6-7 minutes per side if grilling; 20-25 minutes if baking at 400°F). Once done, slice the chicken into strips.
- Make the Tzatziki: In a bowl, combine yogurt, grated cucumber, minced garlic, dill, and lemon juice. Mix well and set aside.
- Assemble the Bowls: Start with a base of cooked quinoa or rice. Top with slices of chicken, followed by chopped cucumber, tomatoes, red onion, crumbled feta cheese, and fresh parsley.
- Finish with Tzatziki: Drizzle a generous amount of tzatziki sauce over your creations and serve!
Notes
For even juicier chicken, marinate longer (up to 2 hours). Grating the cucumber for the tzatziki maintains a creamy texture.
