- 2 cloves minced garlic
- 2 tablespoons Greek seasoning
- 1 cup cherry tomatoes
- 1 cucumber
- 1 red onion
- 1 bell pepper
- 1/2 cup feta cheese
- 1 cup tzatziki sauce (made with Greek yogurt, grated cucumber, garlic, lemon juice, and dill)
- 2 lemon wedges
- Pita bread (optional)
Instructions
- Marinate the Chicken: Mix olive oil, minced garlic, and Greek seasoning in a bowl. Add the chicken breasts, ensuring they are well coated. Let this marinate for at least 30 minutes.
- Cook the Chicken: Preheat your grill or oven. Cook the marinated chicken until it reaches an internal temperature of 165°F (75°C). Once done, slice it into strips.
- Make the Tzatziki Sauce: In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill. Stir until well mixed.
- Assemble the Bowls: In serving bowls, layer the fresh veggies—cucumber, cherry tomatoes, diced bell pepper, and sliced red onion. Top it off with sliced chicken, crumbled feta, and a generous dollop of tzatziki sauce.
- Serve: Add lemon wedges on the side and include pita bread if desired.
