- 200g dates, pitted and chopped
- 250ml boiling water
- 1 tsp baking soda
- 100g unsalted butter, softened
- 150g brown sugar
- 2 large eggs
- 200g all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- For the sauce:
- 200g brown sugar
- 200ml heavy cream
- 100g unsalted butter
Instructions
- Preheat your oven to 180°C (350°F) and grease a baking dish thoroughly.
- In a bowl, combine the chopped dates with baking soda, then pour the boiling water over them. Let them sit for a moment to soften.
- In another bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition.
- Stir in the softened date mixture until well combined.
- In a separate bowl, sift together the flour, baking powder, and salt. Gradually fold this dry mix into the wet ingredients until just combined.
- Pour your batter into the greased baking dish and bake for approximately 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- For the sauce, combine brown sugar, heavy cream, and butter in a saucepan over medium heat. Cook, stirring frequently, until the mixture is smooth and glossy.
- Once the pudding has cooled slightly, serve warm, generously drizzled with the rich sauce.
Notes
Serve with a scoop of vanilla ice cream or whipped cream for a perfect blend of textures. Leftovers can be refrigerated for up to three days.
