Description

A delightful British dessert featuring a warm, sticky pudding made from dates and served with a rich caramel sauce.


Ingredients

  • 200g dates, pitted and chopped
  • 250ml boiling water
  • 1 tsp baking soda
  • 100g unsalted butter, softened
  • 150g brown sugar
  • 2 large eggs
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • For the sauce:
  • 200g brown sugar
  • 200ml heavy cream
  • 100g unsalted butter

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a baking dish thoroughly.
  2. In a bowl, combine the chopped dates with baking soda, then pour the boiling water over them. Let them sit for a moment to soften.
  3. In another bowl, cream together the softened butter and brown sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the softened date mixture until well combined.
  5. In a separate bowl, sift together the flour, baking powder, and salt. Gradually fold this dry mix into the wet ingredients until just combined.
  6. Pour your batter into the greased baking dish and bake for approximately 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. For the sauce, combine brown sugar, heavy cream, and butter in a saucepan over medium heat. Cook, stirring frequently, until the mixture is smooth and glossy.
  8. Once the pudding has cooled slightly, serve warm, generously drizzled with the rich sauce.

Notes

Serve with a scoop of vanilla ice cream or whipped cream for a perfect blend of textures. Leftovers can be refrigerated for up to three days.
