Description
A rich and creamy Beef Stroganoff featuring tender rib-eye steak and earthy mushrooms in a silky sour cream sauce.

- 600 g / 1 lb 5 oz rib-eye steak, trimmed and pounded ¾ cm thick
- 300 g / 10 oz cremini mushrooms, sliced ⅛-inch thick
- 1 medium onion, thin-sliced
- 1 Tbsp Dijon mustard
- 150 ml / ⅔ cup full-fat sour cream
- 500 ml / 2 cups low-salt beef broth
- 2 Tbsp butter
- 1 Tbsp plain flour
- 2 Tbsp neutral oil for searing
- Kosher salt to taste
- Freshly cracked black pepper to taste
- Chopped chives for garnish
- Egg noodles or tagliatelle for serving
Instructions
- Pound the rib-eye steak to ¾ cm thickness and slice into strips, seasoning with salt and pepper.
- In a large skillet, heat 1 Tbsp of oil over high heat and sear half the beef strips for about 30 seconds per side until brown. Transfer to a plate.
- Add the remaining oil to the skillet and repeat the process with the rest of the beef. Set aside once done.
- Lower the heat and add the butter. Once melted, add the onions and cook for 1 minute. Add the mushrooms and cook for about 4 minutes, or until golden.
- Sprinkle the flour over the onions and mushrooms, stirring for 1 minute.
- Deglaze the skillet with ½ cup of beef broth, scraping up any bits stuck to the bottom. Add remaining broth and Dijon mustard; let simmer for 5 minutes.
- Remove from heat and stir in the sour cream until smooth.
- Return the beef along with its juices, heating gently for 1 minute on low.
- Serve over buttered egg noodles or tagliatelle and garnish with chopped chives.
Notes
For a lighter version, consider using Greek yogurt instead of sour cream. You can also substitute rib-eye with chicken or pork.
